Ingrediants

Chilli Garlic Butter

  • 2 tbsp olive oil
  • 100g salted butter
  • 3 cloves of garlic
  • 1 red chilli
  • 1 tsp ground pepper

Main

  • 12 Scallops trimmed with the shells
  • 100ml dry white wine
  • 1/2 a bunch of flat leaf parsely

Equipement needed

Method

  1. Spread hot coals over the base of your fire pit in and flat and even layer as the Scallops will be diectly cooked on the coals
  2. Set up the tripod for the chilli garlic butter
  3. Start by making the chili garlic butter over the fire bowl. Place the oil and butter into the hanging bowl to melt.
  4. Once melted add the garlic, chilli and pepper inot the hanging bowl. Give it a good stir and let all the ingrediants party, then set aside.
  5. Add a dash of white wine to each scallop
  6. Using tongs, place each shell directly onto the coals, carefully positioninh them so they can't tip over. Cook for 4-6 minutes or until cooked through, turning the scallops halfway with some tongs.
  7. While cooking, remove the chilli garlic butter from the heat.
  8. Once cooked remove the scallops from the fire and drizzle about 1 tablespoon of the melted chilli garlic butter over each golden scallop and scatter with parsely.
  9. They are now ready for you to enjoy.
